Instructions:

  1. Soaking: Rinse the dried corn kernels in a colander under cold running water for a few minutes. Transfer them to a large bowl or pot and cover them with at least twice their volume of water (or broth). Soaking helps rehydrate the kernels, reducing cooking time and improving their texture. Let them soak for at least 2 hours, or preferably overnight.
  2. Discarding the soaking water: After soaking, drain the water used for soaking. This water may contain impurities or debris, and using fresh water for cooking ensures a cleaner flavor.
  3. Simmering: Transfer the soaked corn kernels to a pot and add fresh water or broth to cover them completely. Bring the water to a boil over medium-high heat. Once boiling, reduce heat to low, cover the pot with a lid, and simmer for 45 to 60 minutes, or until the corn kernels are tender. Check for doneness by tasting a few kernels; they should be soft and have a pleasant bite.
  4. Seasoning: Once the corn is cooked, remove the pot from the heat and season with salt to taste. You can also add a pat of butter or a drizzle of olive oil for extra flavor and richness.

Tips:

Spices and herbs: For additional flavor, you can add spices or herbs like cumin, chili powder, oregano, or thyme during the simmering process.

Draining the excess water: After simmering, if there is excess water remaining in the pot, you can drain it off using a fine-mesh strainer. However, a small amount of liquid can be retained for a more flavorful result.

Cooking variations:

Pressure cooker: If you have a pressure cooker, you can significantly reduce the cooking time. Add the soaked corn and fresh water/broth to the pressure cooker, bring it to pressure according to your specific model's instructions, and cook for just 5-7 minutes. Then, allow the pressure to release naturally for 10 minutes before opening the lid.

Microwave: While not the most traditional method, you can also cook dried corn in the microwave. Follow the instructions on a microwave-safe bowl designed for 

 steaming, adjusting the cooking time and water amount based on the quantity of corn and your specific microwave wattage.
